Vegetable Chowmein

I love colours and food with colours. Recently i found a red /purple cabbage and zucchini in a local supermarket .I was overjoyed and felt tempted to try the great Indo-Chinese food that is vegetable chowmein.

The Vegetable Chowmein is inspired from a restaurant in Pune which i visited last month. The recipe combines boiled noodles as well as crispy fried noodles. So it offers variety of textures and colours. Also, the taste is sweet and sour. Hence it is a variant of the indo chinese chowmein available in the market.

Recipe :

Hakka Noodles- 1packet
Red/Purple cabbage-1/2 finely diced
Cabbage-1/2 diced finely
Carrot-1 , cut into thin long strips
Zucchini -1/2 cut into thin long strips
Capscium -1 , juvelines
Onion- 1 ,sliced
Spring onions -1 finely chopped
Tomato:1/2 , cut into thin strips
Sesame seeds -2 tsp, lightly roasted
Soya sauce -2 tsp
Vinegar-2 tsp
Hot and sweet sauce- 2 tsp
Tomato ketchup-3 tsp
Sugar-2 tsp( powdered)
Red chilli sauce -2 tsp
Salt-1/2 tsp
Oil-3 tbsp
Black pepper powder-1/4 tsp

In a deep vessel, take water and turn on the heat. Add salt and once it is boiled add noodles to it. Let it boil for two minutes. Strain a quarter of the boiled noodles in a strainer and drain cold water into it to stop the cooking process. Keep these noodles aside for 15-20 minutes till they are dry. These will be deep fried in oil for later use.

Let the remaining noodles boil for another one minute or so till it is al dante that is just done.
Strain noodles and pour cold water into the noodles. Add a tsp of oil to the strained noodles and mix well so they don’t stick to one another.

Add a tsp of cornflour to the noodles we kept for drying and coat it well. Heat oil in a wok and deep fry noodles till these are golden brown. Take out on absorvent paper.

In a wok or kadhai, add 3 tbsp olive oil. Once it is hot, add carrots and let it cook on a high flame for a minute. Now add cabbage, red cabbage, capscicum, onion and saute for 2 minutes on a high flame. In a bowl, mix vinegar, tomato sauce, hot and sweet sauce, red chiili sauce , sugar and mix well.
Add boiled noodles and sauce vinegar mix, salt, pepper In the sauted vegetables. Mix well. Now add fried noodles to it. Give it a good mix.

Garnish with sliced tomatoes, sesame seeds and serve hot.
